Coconut Oil Fudge

If this is the only recipe you try on my site, you must try the coconut oil fudge. I am eating some right now as I type this. I love it! Everyone who I give it to loves it and actually starts making their own. It is amazing and super healthy! It is packed full of good fats, enzymes, vitamins, minerals and antioxidants. It is also fool-proof. You don't have to follow the measurements exactly to get amazing results. It is also GAPS diet and SCD diet friendly.

I would recommend using organic coconut oil. I like Nutiva and Tropical Traditions. Using raw honey is a must. It is important to use an all natural peanut butter. You can substitute almond, hazelnut or cashew butter for the peanut butter.


Coconut oil 1 cup

Natural peanut butter 2/3 cup

Raw honey 1/2 cup

Cocoa powder 1/4 cup

Chopped nuts 1/2 cup

Chia seed 2 TBS (optional)

Stir coconut oil and peanut butter together. This recipe works best when the coconut oil is about 74 degrees. When the coconut oil is too cold it is difficult to blend it in. If the coconut oil is warm and liquid, it blends in but the honey sinks to the bottom.

Stir in honey and cocoa powder. Stir in nuts and seeds. This mixture does not have to be completely stirred in. I actually like it best when there are swirls of peanut butter and chunks of coconut oil.

Pour the mixture into a 8 x 8 glass dish or on a large plate. Put it in the fridge or freezer to harden. If you put it in the freezer you will want to get it out in about 15 minutes and cut it. Storing it in the freezer gives it a firmer, chewier texture. Storing it in the fridge gives it a fudgier texture. it must be kept in the fridge or freezer or it will melt.

This recipe is full of good fats. I eat loads of this and have not gained a pound. In fact, I have lost a little weight. The coconut oil is composed of medium chain fatty acids. These are essential and beneficial to the body and are not stored as fat. They are used as energy and to repair damaged cells.
