Chocolate Coconut Recipes
I love chocolate coconut recipes. I feel like they take me to another place when I eat them. The raw cacao powder definitely gives me energy and the coconut provides all kinds of great health benefits. Coconut desserts are so healthy there is no need to feel guilty eating them. I use maple syrup or agave. I always try to use raw, organic and top quality sweeteners.
Chocolate Coconut Berry Dip
I use this coconut dessert as a warm berry dip. I also spread it on wax paper and refrigerate it to make a delicious fudge. The coconut is actually a coconut spread. I buy mine at my local health food store. The brand is Healthy Addictions and it really is addictive in a good way. I get the raw cacao powder from Ultimate Superfoods.
You don't want to heat the coconut spread directly in a saucepan. If you have a double boiler that works great. I just put the coconut spread in a glass pyrex measuring cup. Then I put the measuring cup in a saucepan of water and heat it on low.
When it is melted, then I add the additional ingredients.
1/2 cup coconut spread
1/2 cup maple syrup
1/2 cup raw cacao powder
sprinkle of sea salt
Stir together very well, the coconut spread will try to separate so take off heat and continue to stir.
Put in a glass bowl and dip fresh or frozen berries into it. This is really amazingly delicious!
Coconut Oil Fudge
This yummy raw fudge recipe is fast and easy!
1/2 cup organic coconut oil
1/3 cup raw cacao powder
1/2 cup maple syrup or organic agave
1/4 tsp vanilla extract
1/4 tsp sea salt
Melt the coconut oil is a glass bowl or cup over a saucepan or hot water. Only heat it enough to melt it. It melts very quickly and stays liquid at 76 degrees. Pour coconut oil into your blender. Add maple syrup and blend. Slowly add cacao powder and blend.
Pour into an 8 x 8 glass dish and refrigerate. It should set up in about 20 minutes. This fudge is best eaten right out of the fridge. It will store for as long as a year in the refrigerator.
Raw Chocolate Coconut Macaroons
This coconut recipe is adapted from a recipe given to me by my good friend Brittany Goff.
3 cups unsweetened coconut flakes
1 cup raw cacao powder
1 cup maple syrup or 3/4 c agave
1/3 cup coconut oil
1 tsp vanilla extract
1/2 tsp sea salt
Mix all ingredients. Form into little balls and refrigerate. These delicious little treats do best stored in the refrigerator. Take out 20 minutes before eaten if you like them a little softer.
